I told Kenzie that a fairy dropped off some clouds for our breakfast this morning! This was such a quick and easy dish to make, and a really nice change from the usual bowl of cereal. It’s also great because if you’ve got an egg, you’re good to go! I added some “bag cheese,” but it’s not necessary. We’re just super cheesy in this house.
Fairy Cloud Eggs
ingredients
eggs (however many you want to make)
pinch of salt
shredded or grated cheese (to taste. I used about a handful for three eggs)

Preheat oven to 450°F. Prep a baking sheet with a silpat mat or parchment paper. Separate the eggs, cracking the whites into a single clean bowl, and putting each yolk into their own individual pinch bowl. (This makes it easier to pour the yolk into the cloud.)
Using a stand mixer, hand mixer, or sheer will and determination, whip the egg whites into stiff meringue peaks. If you’re using cheese, gently fold it in. Plop meringue clouds onto your baking sheet, one plop per egg.
Use a spoon to make little beds for each of your egg yolks. But don’t add the yolks yet! Bake clouds for three minutes.
Pull the sheet out of the oven, nestle a yolk in each cloud, then put everything back in the oven for another three minutes.
